Raw: Day 16

Breakfast:

Strawberry Banana Blueberry Smoothie
1 c frozen blueberries, 1 frozen banana, 1 c strawberries







Second Breakfast:

Fig Porridge
This is one of my favorites so far!

While I did briefly think this resembles cat food too much for my liking, the taste and texture was phenomenal! The color looked more like oatmeal before I added the goji berries.

1 c steel cut oats, presoaked for 6-8 hours (Can substitute rolled oats soaked for 1 hour. I actually did half and half)
1/2 c walnuts, soaked for 1-2 hours
1/2 c figs, chopped (if dried, soak 1-2 hours)
1 TBS honey
1 tsp vanilla extract
1/4 c goji berries, soaked (optional)

1. Place soaked oats and walnuts into a food processor and process until smooth and creamy.
2. Add remaining ingredients and blend until chunky.


Lunch:

Leftover Spinach Pie

Dinner:

Raw Pasta with Cream Sauce
Spinach Salad and fruit

This picture isn't so great, but this tasted good. This was my first time eating kelp noodles. They have a neutral taste and a little crunch, "al dente." Kelp is high in iodine, which is important for thyroid function and can affect energy.


1 c cashews, soaked (overnight)
1/4 c pine nuts
2 tsp raw honey
1 clove garlic
1/2 tsp allspice
1/4 tsp black pepper
2 TBS lemon juice
1 tsp nutritional yeast (optional)
1/2 package kelp noodles

1. For sauce, blend all ingredients except noodles in a blender until smooth.
2. Rinse the kelp noodles and soak them in water for 30 minutes. Or, soften by covering in olive oil and nama shoyu for 30 minutes to enhance flavor.
