Raw: Days 35-36

Yesterday: Day 35

Breakfast:
Strawberry, Blackberry, Banana Smoothie

Lunch:
Last of the Shepherd's Pie

Dinner:
Sprout Burger
Cauliflower Couscous Salad - Fantastic and super quick!

Today: Day 36

 Chia Porridge

Yum! Tastes way better than it looks. I may have added a tablespoon of cinnamon instead of a teaspoon. I do know the current organic cinnamon I have is more intense than the regular cinnamon I've used in the past.

Banana-Pineapple Smoothie

Lunch:

Sprout Burger and Cauliflower Couscous Salad

Dinner:

Mock-Tuna Salad Sandwich

Yummm...Though I haven't really been craving sandwiches, it seems like everyone has been talking about Jimmy John's lately. This hit the spot. I overdid it on the red onion, but I love 'em! Who knew sunflower seeds were so versatile?

I do not have dulse flakes. I looked for them at the health food store, but couldn't find them. I read nori sheets can be a replacement. I tore up a strip of a nori sheets and put it in a coffee grinder to break it up.

This also required little prep time. The bread is Essene Bread I made last week.

Dessert: The last of the Carrot Cake and Chocolate Chip Cookies! More on those tomorrow. :)

Raw: Day 34

Breakfast:
Strawberry, Mango, Banana Smoothie

Lunch:
 Chipotle Sprout Wrap

Snack:
Apple with Almond Butter
2 GingerSnap Larabars

Dinner:
Sprout Burger

Yum! I loved this burger! I made some barbeque sauce for a topping. The flavor was a little off. I think I needed more tomatoes than what I put in. I also didn't have a chipotle pepper. I added some molasses and more vinegar. Still no comparison to Gates or Arthur Bryant's! I'll work on the recipe.

Raw: Days 29-33

Even with all my free time on spring break, I managed to get behind on posting. Nothing too eventful in terms of food compared with all I made on Monday and Tuesday.

Here are some highlights from the last few days:

 Carrot Cake

So good and definitely satisfied my sweet tooth! Next time I'll add the almond flour to see if it gets a little fluffier.

Spring Green Salad with blackberries, walnuts, and strawberry dressing.

 Chipotle Sprout Wrap

This was super easy to make. The cabbage leaf rolled right up perfectly. The Chipotle Cashew spread has a great flavor.
Corn chips with fresh salsa and blackberry-limeade.
Rainbow Taco

Girls Lunch at FÜD!

Sooooo good. I've been dying to try this place. I can't wait to go back and try their non-raw items too. The weather was so beautiful I even rode my bike there!

If anyone ever wants to go to FÜD, just let me know. :)

Raw: Day 28

Another big day in my Raw Food Kitchen! Spring break has allowed me to dehydrate a lot of things.

Here's what I worked on today:
Raw Trail Mix

Raw Corn Chips (Mine don't look anything like the amazing picture on this website! Maybe I made them too thin.) They're still pretty tasty. The onion makes them pretty zesty. Can't wait to make salsa to dip these into.

Banana Leathers
I'm so excited to use them as crepes!

Strawberry Pear Roll Ups

Curried Kale Chips

French Kale Chips

Yum! These are both really zesty! I do like the ones I bought better so next time I'll try to copy them.

Homemade Larabars! LOVE LOVE LOVE these.

Cherry Pie
(I doubled the recipe. Next time I'll triple it.)

Ginger Snap

3/4-1 c dates - Chop then process in food processor
1 c almonds - Separately process in food processor
1 tsp cinnamon
1/2 tsp ground cloves
1 TBSP minced ginger

I added 2 TBSP water and mixed everything together in the food processor

Form on waxed paper and refrigerate for an hour. Then cut and store in plastic wrap or baggies.

Wheatberry Sprouts

First time sprouting! I also sprouted oat grouts for the Trail Mix.

It's amazing how two cups of wheatberries grew into over 5 cups! Even between day 1 and two, they grew quite a bit.

Sprouted Essene Bread

This started out a little disastrous. The recipe said the wheatberries and water should make dough, but it was like very watery soup! I added all the wheatberries and a cup of almond flour. I have no idea what the texture is supposed to be like. It's still dehydrating, but I think it's going to be kind of like pita. I found lots of other recipes online, so I'll try another one next time.

And today's menu...

Breakfast:
Sweet Almond Oat Cereal

Lunch:
Leftover Lasagna (I still have more! The serving size on the recipe is 4, but those are very large slices.)

Snack:
Chocolate Banana Shake. I love this as a sweet and quick treat.
I also snacked on a lot of the goodies I made today.

Dinner:
I haven't eaten yet! I should finished off the lasagna, but I can only eat so much of it for so many days!

Raw: Day 27

Breakfast:
Sweet Almond Oat Cereal

This was very good. I can't wait to try this recipe in my new food processor to blend it more!

I finally caved in and purchased a Cuisinart Prep 11-plus. So worth it! I can't believe I put my blender through all that stress when I could have gotten this guy 27 days ago! I already used it twice today and it's amazing how quickly it works. LOVE.

Big Dinner Adventure!
Shepherd's Pie with Mashed Taters

Amazing! This was worth the work.
The macadamia nut/cauliflower "taters" really tasted like mashed potatoes!

Left: Marinating Portobello Mushrooms

Right: Veggies - Carrots, Asparagus Tips, Onion

Left: Black Sesame Seed Gravy

Right: Vegetables and Mushrooms in the gravy

Left: "Taters" layered over the vegetables and gravy

Middle: Fresh out of the dehydrator! It was nice having a warm meal.

Right: Taadaa!

Raw: Day 26

Breakfast:
Blueberry Hemp Seed Powder Protein Smoothie

Lunch:
Custom Salad from Ingredient. Yum! Eating out made easy. :)

Drink:
Raw Spiced Chai
Super Tasty! As much as I love coffee, I actually haven't been craving it, but this would fill that void if needed.

Dinner:
I had a late lunch, so I wasn't too hungry for dinner. I snacked on some nuts, raw cookies, and dried fruit.

Raw: Day 25

Breakfast:
Banana, Orange, Strawberry Smoothie

Lunch:
I can't remember! Maybe some more lasagna?

Dinner:
Suzannah and David's wedding! I had a plate full of greens and fruit. I did cheat with a super tiny piece of veggie pizza, but honestly cooked food just doesn't taste as good anymore!

Dessert:
Another cheat: Carrot Wedding Cake
It was very good cake, but after eating raw, cooked/baked food doesn't seem to have as intense flavors and it seems very sugary. I will have to make raw carrot cake soon to compare.

Raw: Day 24

Breakfast:

Mayan Chocolate Banana Smoothie

Lunch:

Leftover Spinach Pie, Apple

Dinner:

A little lasagna, then a salad at Grand St. Cafe. I had to custom order it based on another salad on the menu. I told the waitress I only wanted raw ingredients, but I could tell it just wasn't pure. Maybe the dressing had sugar? The lighting was really low so I couldn't inspect all that well. The downfall of raw...eating out.

I did cheat and have a sugar cookie for dessert. It was a bachelorette party after all! I had to celebrate!

Thursday, March 15, 2012

Raw: Day 23

Breakfast:

Vanilla Almond Pear Smoothie

Yum!

Lunch:
Leftover Lasagna

Snack:
Trail mix with almonds, cashews, pepitas, sunflower seeds, and raisins

Dinner:

Spinach Salad with Strawberry Dressing and Hazelnuts

I used spinach instead of arugula. This was great and super quick to make.

I also had leftover Corn Chowder. Not so great this late in the leftovers game.

Wednesday, March 14, 2012

Raw: Day 22

Breakfast:

Green Cinnamon Banana Smoothie
I used 2 cups water, 2 bananas, 2 cups spinach, 1/2 tsp cinnamon and 1/2 tsp raw honey. You can't even taste the spinach!

Lunch:

More "Taco" Salad Mexican Pate with Mole Sauce. Still good

Dinner:

Raw Lasagna with Tomato Marinara Sauce and Almond Cheese BIG YUM!

Left: Tomato Marinara Sauce

This has great flavor. I'm sure using tomatoes in season would make it even better.

Right: Almond Cheese

The miso and turmeric add a distinct taste. Again, using a food processor would make it creamier and less chunky than my blender.

Left: Zucchini "noodles" (The recipe calls for two zucchini. I just used one. I sliced my noodles very thinly with a vegetable peeler.)

Right: Layering the sauce, cheese, noodles, spinach, and tomatoes

Taa daa!

This is a hit. The flavors of the sauce and the cheese are great together. The lasagna filled me up and is very nutrient dense, as evidenced by this dish being super heavy! The only bummer is after I sliced a piece, a lot of water settled at the bottom. I'm not sure if that was the zucchini or if I added a bit too much water (only 1/2 or less additional) to the cheese to get it to blend better.

Raw: Day 21

I can't believe it's been three weeks already! I LOVE the raw diet. I feel so good and healthy. I was eying some baked goods in the grocery store today, but I really haven't had any cravings for particular foods. Maybe pizza, but I'm going to conquer that one over spring break.

Breakfast:
Fig Porridge

Lunch:
Corn Chowder and Cauliflower Couscous

Snack:
I found some great raw snacks at Green Acres in Briarcliff.

The Raw Rev Chocolate & Coconut bar was fantastic, especially at 79 cents!

The Kale chips are very good, but steep in price. I look forward to making some over spring break.

More goodies I found:

Dinner:
"Taco" Salad with Mexican Pate and Mole Sauce

I love this stuff!

Dessert:

Macaroon

Monday, March 12, 2012

Raw: Day 20

I found all my recipes from my Everything Raw Food Recipe Book online.

Breakfast: Kiwi Mango Smoothie

Lunch: Cauliflower Couscous Salad and my last veggie burger (until the next round!)

Snack: Apple

Dinner: Lettuce Wraps with Mexican Pate and Mole

Left: Mole ingredients
Right: All blended up!

This is great. You can really taste the banana, but I don't mind that. The sweet and spice together is a perfect blend. I need to find more things to put it on! I'm wanting to make some corn chips. I love Mexican food.

Left: Mexican Pate

Wow! Explosion of flavor! I love it. It was a little watery, probably because I overloaded the lime juice because you can never have too much lime juice...until it gets watery. :)

Right: All together! Maybe I went a little overboard because the mole on there doesn't look all that appetizing. However, the mole and the pate complemented each other wonderfully! The certainly satisfied my Mexican craving.

Dessert:
Macaroon
