Raw: Day 8

Day 8

It's Wednesday again; I made it through an entire week! I didn't even cheat, unless you count a few glasses of red wine and trace amounts of Braggs Amino Acid.

Breakfast:
I tried something other than a smoothie today. Steel Oats with almonds, agave, and fresh strawberries. I forgot to drain the almonds, which soaked over night, so it was very liquidy to begin with. After I drained that off, it was great! It tasted like cold, chewy oatmeal.

Lunch:
Leftovers. I have so much fresh produce on its way out. I need to use it quickly and hopefully it will be super tasty. I had one leftover Jicama Empanada, Cabbage Apple Walnut Salad, and Chocolate Pudding.


Snack:
Strawberry, Banana, Orange Smoothie with Spinach and Ginger

Super good! Unfortunately, I had to drink this way too quickly after school and before coaching soccer, which I believe is now attributing to a lot of bloating. :( Next time I will savor this.






Dinner:
Pear Fennel Soup
Looks like Applesauce, tastes like Pearsauce!

Although not what I expected, this was a winner. I don't personally cook with fennel so I had forgotten its taste, which is fairly tasteless, at least in combination with the other ingredients in this soup. 2 pears, 1 fennel bulb, 1 TBS lemon juice, 1 tsp minced ginger, 1 clove garlic. Paprika sprinkled on top. The recipe also suggested optional cubed zucchini as garnish. I'm glad I didn't go through the trouble of cutting one up for this. I liked it as is.

Raw: Day 7

Day 7

Breakfast: Pear Strawberry Spinach Smoothie, GoRaw Apple Cinnamon Granola

Despite its looks (complementary colors make brown kids!), this smoothie was actually very tasty. I felt very healthy getting all those Spinach vitamins! I'll make this one again.

Lunch: Chile Relleno (other half leftover from yesterday), chocolate pudding

Snack: Homemade Key Lime Pie LaraBar. Yummmmmm...


Dinner: Thick and Heavy Asparagus Soup

I'm renaming this Thick and Heavy Avocado Soup. This tasted like glorified smooth guacamole with oregano and rosemary. Heavy on the avocado and light on the asparagus, the consistency was very thick. I added quite a bit of water to thin it down. The recipe said it served 4, but thankfully it will only serve 2. Maybe I needed to add even more water. This was decent, but I'm not in any hurry to make this again. I have eaten 4 avocados in the last 6 days, which is more than I usually eat in months. I like them alright, but I can't stomach eating another one for a long while, unless they're blended into chocolate pudding. :)

After-dinner drink: Cacao Powder in Almond Milk. I was too lazy to use the blender again (I'm getting tired of washing it), so I attempted to mix it with a spoon. It obviously didn't fully dissolve, but I didn't mind!

Raw: Day 6

Day 6

Breakfast:

Mango Kiwi Smoothie. 4 kiwi with peel, 2 mangoes (peeled and sliced), juice of 2 oranges, 1/2 cup ice. Winner!

Lunch:

Leftover Jicama Empanadas. Still good, but much better fresh.
Chocolate Pudding

Snack: Braeburn apple

Dinner:

Chile Rellenos with Jicama "Rice"

The jicama mixture was very juicy. It may have been on it's way out or perhaps I added too much olive oil/lime juice. The topping was blended tomato, sun-dried tomato, garlic, chile pepper, cilantro, and cumin. I liked this entree, but I prefer the Jicama Empanadas.

Raw: Day 5

Day 5

Breakfast:

Berry Banana Smoothie with fresh strawberries, a banana, and frozen blueberries blended with one cup of ice. The recipe said to add one cup of water, but I added a splash of almond milk instead.






Lunch:

Red and Green Cabbage tossed with apple cider vinegar, sea salt, and pepper topped with a sliced Braeburn apple and walnuts. This was average. Next time I'll leave out the salt. Too salty again.







Dinner:

Jicama Empanadas! AWESOME. Cilantro and lime, how could I not love these? My cheese slicer is busted and I don't have a mandoline, so I just used a knife. I'll get a new cheese slicer before I make this again so I can get thinner, more even slices. The recipe said to fold the slide in half to make the empanada, but I cut the slices in half to make a sandwich.

The jicama slices are coated with an olive oil, lime juice, and cumin dressing.


Filling for the empanadas:

Walnuts, Pumpkin Seeds, Cinnamon, Cumin, Garlic, Onion, Jalapeno Pepper, and Cilantro








Dessert Streak:

Chocolate Pudding

2 bananas, 1 avocado, 2 1/2 TBS cacao powder, 2 tsp Maca Powder

Raw: Day 4

Day 4

Breakfast:

Nectarine Strawberry Smoothie with fresh squeezed orange juice, gingerroot, and fresh lime juice. SO GOOD.

Lunch:

Chocolate Almond Milk Smoothie with banana, dates, cacao powder, cayenne, and vanilla extract. Delicious! The dates settled at the bottom, but otherwise no complaints.

Dinner:

Ate out at Eden Alley!
Mandarin Salad with Beets and Red Onion. Dessert. Was. Awesome. I wish I had a picture. It was some kind of pie made with cashews for the crust and a compote topping of blended apple and carrot.


More Dessert:

Date Brownies with Cacao Powder, vanilla extract, sea salt, and walnuts.
